Keto Falafel Bowl

Hiiii.

Yesterday I wanted to eat something different, and I have been craving falafel for while. It's no secret that falafel is made from chickpeas. But I wanted to give it a twist by making this falafel based on cauliflower and almond flour. And I can't tell you how delicious it turned out.

For this recipe you can use a waffle iron or if you want to keep it simple. Use an oven.


For the dressing:

¼ cup olive oil.

2 cloves garlic (minced).

1/3 cup tahini.

3 tablespoons chopped parsley.

1/3 cup lime juice.

¼ teaspoon pink salt and black pepper.



For the falafel:

1 tablespoon olive oil.

1 shallot.

3 cloves garlic (minced).

3 cup cauliflower rice (frozen).

½ cup parsley (chopped).

½ cup almond flour.

1 egg.

2 tablespoons turmeric and coriander.

1 tablespoon lime zest.

½ teaspoon pink salt.

¼ teaspoon black pepper.



For the salad:

2 romaine lettuce or arugula.

1 small cucumber.

¼ cup Kalamata olives.

Instructions:

  1. In a small skillet combine the oil and garlic. Cook over low heat until it sizzles, cook for 1 minute, then transfer to a blender or food processor, add the tahini, parsley, lemon juice and process until all ingredients are blended. Add warm water, 1 tablespoon at a time, and process until you get the right texture, adding 7 to 8 tablespoons of water. Season with salt and pepper.

  2. Make the falafel: in a small skillet heat the oil, shallot and cook, stirring occasionally, for 3 minutes. Add the garlic and cook for another minute. Transfer to a large bowl and let cool. Place the cauliflower rice in a clean towel and squeeze out excess water. Add it to the bowl with the onion and include the remaining ingredients.

  3. Bake the falafel: Heat the oven to 400F, add wax paper and line a baking sheet, using a spoon, divide the mixture into balls, spray with cooking spray. Bake for 15 minutes, flip, spray the other side and bake until cooked through and golden brown.

  4. In a large bowl combine the salad ingredients, add the dressing, divide it into 2 bowls and serve the falafel. You can add a little more dressing on the side for extraaa flavorrrrrr.

Tip: in my case I used a waffle iron, I placed a ball in the center, and let it cook until golden brown. Then to make it crunchy I took it to the airfryer for 5 minutes and it was ready.
