Plenah’s Egg Salad
I started my journey with egg salads, when I moved to NY back in 2017. My aunt used to take me to her favorite place to have breakfast, and of course, that included a bagel.
I absolutely love everything bagels, toasted scoop in with egg salad and chive cream cheese.
Of course, I can't have bagels everyday as I wish one could. I made this egg salad thinking of giving myself a treat as well as giving the nutrients I need to keep my body going through the day.
You’ll need:
2 boiled eggs.
1/2 avocado.
2 tablespoons of @kitehillfoods cream cheese
Dill to taste.
1/2 Purple onion.
1 tablespoon of mustard.
Salt and pepper to taste.
1 slice of sour dough bread.
Instructions:
Boil 2 eggs and cut them into pieces.
Add avocado, purple onion, cream cheese, mustard salt, pepper and mix well.
Serve with sourdough bread or any bread you have available.
Topping:
Red pepper flakes & @traderjoes everything but the bagel seasoning 🤸🏼♀️
