Vegan Plantain Protein Balls
I had been wanting to make this recipe for few days; last week I went to visit my cousin and found her making this beauty and I was craving it because I helped her but I didn't have time to try them. Yesterday I decided to make them and today I share them with you.
Ingredients:
2 ripe plantains.
1/2 cup of oat flour.
1 tablespoon of chia seeds.
Use the protein of your choice. I used Beyondmeat that I already had cooked in the fridge.
Almond cheese or the cheese of your choice. I buy the one I use at traderjoes.
Pink salt.
Instructions:
Boil 2 plantains.
In a bowl put the two plantains and mash them with a potato masher.
Add pink salt, chia seeds and oatmeal.
With the help of your hands mix all the ingredients well.
Wash your hands and spray a little oil on your palms.
Take some of the dough and make a circle and with your index finger make a hole in it and little by little open it to the sides so you can introduce your protein.
Add your outlines. I made some with cheese and others with protein and cheese.
To close the hole, wet your hand with a little water, so it's easier and it won't break.
Drizzle the balls with avocado oil.
Let them cook in the air fryer for 10 minutes or until golden brown.
Ps: I paired it with some spinach salad.
