Chewy Cashew Quinoa Cookies

I made these cookies by coming up with a recipe for a cake but the mixture was too thin so I decided to give it a twist. To my surprise they turned out delicious and VERY chewy.

Ingredients:

1/4 cup cooked quinoa.

1 flaxseed egg. (1 tablespoon ground flaxseed + 3 tablespoons water.)

1/2 cup cashew butter.

3/4 cup coconut sugar.

1/2 teaspoon baking soda.

1/2 teaspoon vanilla.

1/2 teaspoon salt.

1/2 cup almond flour.

Ice cream. My favorite is halo top.

1/4 cup white chocolate chips.

Preparation:

1. Heat oven to 350F.

2. In a bowl, add the butter and the rest of the ingredients. Mix well.

3. Add the white chocolate chips (you can add chocolate if you prefer). I used @lilys_sweets

4. Take a baking sheet and add wax paper.

5. Form the balls with the help of a spoon.

6. Bake for 12 - 15 minutes.

7. Enjoy.
