Cauliflower Rice Arancini
I love Italian rice balls, which are traditionally filled with rice, sausage and cheese, rolled into balls, breaded and fried. If you know me, you know that I'm all about recreating recipes and turning them into healthier versions. These cauliflower arancini are no exception, they are made of rice cauliflower, almond cheese, hemp and chia seeds and instead of frying it — I use the air fryer. If you don’t have an air fryer, no worries. Use your oven.
These are perfect for snack or to complement any dish.
Ingredients:
300 gr of cauliflower.
1 cup of spinach.
2 tablespoons tomato sauce.
1 cup almond cheese.
2 tablespoons of hemp and chia seeds.
3 tablespoons coconut flour.
4 tablespoons almond flour.
1 egg.
Instructions:
1. Grate the cauliflower with a grater.
2. Heat a frying pan with coconut oil.
3. Add the spinach and season with pink salt, pepper and garlic.
4. Add the cauliflower and let cook for 5 minutes.
5. Add the cheese and mix for 5 more minutes.
6. Let it rest for 10 minutes.
7. In a bowl add the egg with salt and pepper.
8. In another bowl add the hemp and chia seeds, coconut and almond flour. Mix well.
9.Take two tablespoons of the cauliflower mixture and make balls.
10. Pass the ball through the egg and then through the flour.
11. Continue doing the same process until the dough is gone.
12. Drizzle the balls with olive oil.
13. Cook it in the air fryer for 10 minutes at 350 F.
14. Enjoy with sugar free ketchup.
